I did it, I did it! I made chocolate chip protein cookies that taste just like grandma’s cookies! I kid you not… these are unbelievable! Everything from the classic flavours of “butter,” brown sugar, and vanilla, to the melty chocolate chips, to the soft and chewy middle, to the crisp golden edges.

The best part? They are only 75 calories each! What??? Yes, it’s madness. You can eat four cookies with zero guilt, all the time wondering if this is seriously healthy.

To up the protein content of these amazing cookies, I used Optimum Nutrition Protein in Vanilla Ice Cream. Any vanilla protein will do really. You can also swap in oat flour if you’re not so keen on the protein. I used coconut flour to keep the carbs down (surprise – it’s like my favorite flour!). It doesn’t make them taste like coconut though, so don’t worry! If you don’t have coconut flour, I would try oat flour, gluten-free baking blend, or wheat flour, using twice as much (3/4 cup for a dozen cookies).

Ingredients:

  • 2 scoops vanilla protein powder
  • 6 tbsp. coconut flour
  • 2 tbsp. organic stevia blend = ¼ cup baking stevia or sugar
  • 2 tbsp. Truvia brown sugar blend = ¼ cup brown sugar
  • 1/2 tsp. baking soda
  • 1/4 cup light butter, softened (I used Smart Balance; can also use butter or ghee)
  • 1 whole egg
  • 1/4 tsp. vanilla extract
  • 1 oz. dark chocolate chips (60% cacao)
  • 2 slices fully cooked bacon of choice (I used turkey)

Directions:

Preheat oven to 350 degrees F.

Whisk together dry ingredients in a mixing bowl. Mix in wet ingredients to form a dough. Fold in chocolate chips.

Lightly coat baking sheet with cooking spray. Place twelve rounded tablespoons of dough onto sheet a couple inches apart. Press flat just slightly.

Bake for 8-10 minutes until edges are golden brown. Enjoy!
