Today’s lesson of the day is that parchment paper and wax paper are not the same thing. They also cannot be used interchangeably. Upon placing the cookies in the oven on wax paper I noticed quite a bit of smoke and a burning aroma coming out of the oven. Since Neil is a firefighter I casually let him know about this and he sluffed it off like it was nothing. Somehow the cookies made it through the 15 minute baking period without getting burned and the apartment survived the ordeal without burning down. Good thing we have a firefighter around that is so concerned about our smoke filled apartment!

 

Ingredients:

2 Cup Coconut Flour

2 Scoops Vanilla Whey

1 Cup Stevia

2 tsp Cinnamon

1/4 tsp Cloves

1/4 tsp Nutmeg

1 tsp Baking Soda

1 tsp Baking Powder

2 Egg Whites

1 tsp Vanilla

4 oz. Apple Pear Baby Food

1/4 Cup Fat Free Greek Yogurt (Plain)

1 Cup Pumpkin

Directions:

1.  Preheat your oven to 350 degrees.

2.  Combine ingredients and using a spoon place onto cookie sheet.

3.  Use Parchment Paper and not Wax Paper

4.  Bake for 15-17 Minutes.

*Total batch yields 2 dozen cookies*
