It most definitely wouldn’t be a Trench event without good food. We were stressed to the max this week getting everything ready for the deadlift competition / grand opening. My brain was even flighty-er than usual. These cookies are so easy to make you can do it with half a brain at 3 am.

The mantra I live by “Stick to what your good at and do that really well.”

I am good a easy, crafty, home cookin’.

So here you have it – the ‘Trail Mix Bar’. I went to Bulk Barn and bought an assortment of dried fruit and nuts, threw them into some glasses from the dollar store, typed out some labels and waaala a ‘Trail Mix Bar’.

I also baked two cookie recipes. Super easy super tasty. 2 points Erika. BOOM

 

Candy Cookies – makes 15 cookies

1 1/2 cup oats

2 scoops whey protein

3 egg whites

1/2 cup fat free cottage cheese

1/4 tsp baking powder

1/2 tsp baking soda

1 tbsp vanilla pudding

2 tbsp splenda

4 tbsp brown sugar blend

1/4 tsp vanilla extract

1/4 cup carob candy bits *I bought them from www.lowcarbcanada.com

 

Directions:

1. Place all ingredients into the blender and puree until smooth. Fold in candy bits. Drop into 15 cookies. Bake at 350F for 15 minutes.

Macros: calories 83 – fat 2g – carb 11g – protein 6g

Fudgy Brownie Bites – makes 24 minis

Ingredients:

1/2 cup pumpkin

1/2 cup applesauce

1 oz dark chocolate square

1 egg

1 egg white

1 tsp baking powder

1 tsp baking soda

1/2 cup stevia

1/4 cup cocoa powder

1/2 cup rolled oats

Directions:

1. Microwave chocolate square. Combine all ingredients into the blender and puree until smooth. Pour batter into a greased muffin tin or use a silicone muffin pan. Bake for 20 minutes at 350F.

Macros: calories 32 – fat 1g – carb 5g- protein 2g
