This recipe has quickly become one of our favorite dishes to make. It’s got just enough heat to it and the fresh lime juice keeps it cool. These tasty chicken strips are great served fresh from the oven, or use them to slice up hot or cold and top a salad! They are so versatile and you’re sure to love them!!
Little ditty for you… Neil secretly loves junk food, like L.O.V.E.S the stuff. McDonalds, Burger King, Carls, DQ etc. he loves them all. I often hear from clients that they find it difficult to manage their diet when their spouse / partner has a palate such a Neil’s. What I suggest is to find sensible recipe overhauls like these amazing chicken fingers and serve them often. Provided your willing to cook the meal and the food tastes half decent I guarantee your junk food junky will quickly oblige to eating in.
Sriracha Lime Encrusted Chicken Strips:
Ingredients:
- 2- Boneless Skinless Chicken Breasts
- 2/3C- Sriracha flavored almonds OR plain almonds w/ 1.5T sriracha sauce- finely chopped
- 1/2t garlic powder
- 1/4t salt
- 1/4t ground black pepper
- 2 egg whites
- 1/4 C flour
- 1 fresh lime- sliced into wedges
Directions:
Preheat oven to 450 F. Line a baking sheet with parchment paper or spray with nonstick cooking spray
Using 3 medium bowls, place flour in one, egg whites in the second bowl and the chopped almonds, garlic, salt & pepper in the third.
Cut chicken into nuggets or strips then one at a time, dip chicken into flour, then egg whites and finally the almond mixture pressing down lightly to ensure the stick.
Place on baking sheet and repeat until all chicken is used then place in preheated oven and bake for 15-17 mins.
When chicken is done, plate and serve with a couple slices of lime to squirt over the chicken before eating.
Makes 3-4oz servings.
