Ok so a blonde walks into a bar…

Or in this case the blondie is the bar!

I’d tell you these are healthy. But you would never believe me!

Hmm smart blondes to exist… Low in calories, rich in omega 3s, and gluten free.. These may be the smartest blondie’s in the world.

For the past year, I’ve seen the “black bean brownie” recipe popping up all over the blogworld. At first I thought about joining in on the fun…

But if you remember my post about stepping out of your comfort zone, you’ll know I’m trying to put a new twist on just about everything I do. The answer is so simple, even a blonde could figure it out: White Bean Blondies!

I have a sneaky suspicion that many so called ‘dumb-blondes’ are not really as dumb as they seem. They just act dumb for attention, or because they think its cute. Look at Jessica Simpson. I’d argue that she is much smarter than her actions convey. She has even scored contracts with Pizza Hut and Chicken of the Sea as a result of her dumb-blonde antics.

Society has definitely shifted away from this mindset. A perfect example is the strong women we see in the weight room. Women are no longer playing the dumb card. Women are no longer acting weak. We praise intellect, strength and confidence. Act like a lady, train like a beast!

 

Nuttin’ Butter Blondie Bar – makes 16 bars

Ingredients:

1 1/2 cup white beans or chickpeas

3 tbsp almond butter

3/4 tsp baking powder

1-2 tsp vanilla extract

1/8 tsp baking soda

3/4 cup splenda brown sugar blend

1 tbsp unsweetened applesauce

1/4 cup ground flax

2 tsp cinnamon

 

Instructions:

Preheat oven to 350F.

Blend all ingredients until smooth.

Bake for 35-40 minutes. They will look a little undercooked when you take them out of the oven but they firm up as they cool, and you don’t want them to get hard.
