For anyone trying to watch his or her weight, the scariest part of Halloween is not ghosts and goblins but the ever abundant supply of candy. Avoid the temping treats and treat your sweet tooth with this fantastic chocolate cake!
Green Goblin Brownie Cake
Fast Fact: The Green Goblin is a fictional super villain who appears in Marvel Comic Books. Norman Osborn, the original Green Goblin, took a serum which enhanced his physical abilities and intellect. Spinach the secret ‘serum’ in these butternut brownies will surely enhance your physical abilities and intellect. I took my go to squash brownie recipe and made a few adjustments. I reduced the amount of butternut squash and added in thawed from frozen spinach. The result was vegetable chocolate heaven!
Ingredients:
BROWNIE CAKE:
1 cup whole wheat flour
1 cup cocoa
1 tbsp cinnamon
1 tbsp baking soda
3/4 cup baked butternut squash*
1/4 cup thawed from frozen spianch
1/2 cup agave nectar
1/4 cup unsweetened applesauce
6 egg whites
FROSTING: Optional
3 tbsp fat free cream cheese
1 tbsp sugar free peanut butter syrup
1/2 tsp PB2 powder
1. Preheat oven to 350’F.
2. Combine ingredients into a food processor or large bowl.
2. Process until smooth and pour into a glass brownie bowl. Combine frosting ingredients into a blender or magic bullet and process until smooth – set aside.
3. Bake brownie cake for 16 – 18 minutes. Allow 20 – 30 minutes to cool prior to frosting. I choose to add some SPOOKY spiders, but again this is optional.

* I cooked my butternut squash in the crock not overnight. I added a little cinnamon which really sweetened it up. You can also bake it in the oven but I prefer convenience!
