I deliberately omitted the words raw, gluten free and vegan from the title so I didn’t scare anyone away… although after eating a large majority of this high fiber fudge I may reconsider my decision so I don’t have to share!

 

Chocoholic Fudge

For some reason I’ve always shied away from ‘vegan’ recipes. When I think of vegan I think of dirty hippies, playing hacky sack and eating granola. I do not by any means think of delicious mouth watering fudge. My best friend CC made me vegan cookies one time and they were to die for so I attempted to make some raw vegan dirty hippie fudge. I found a recipe for Chocolate Fig Freezer Fudge from the ‘Chocolate Fig’ food blog and changed a few things around so I could easily fit it into my macros.

 

Ingredients:

Bottom:

1 cup pitted Medjool dates

1 cup raw walnuts and almonds

1/4 cup raw cocoa

Top:

2 ripe bananas

1/2 cup raw cocoa

4 tbsp raw honey

4 tbsp almond butter

Directions:

1. Mix together all of the ‘bottom’ ingredients into a food processor.

2. Spread in a large glass baking pan.

3. Mix ‘top’ ingredients into a food processor.

4. Spread over top bottom layer. Freeze for 30 minutes.

MACROS – calories: 111 fat: 6g carb: 15g – protein: 4g

 

*I was shocked how easily the bars came out of the pan. I guess those hippies do know a thing or two about peace!
